I make a Green Avocado salad as a topping for fish tacos:
ReplyDelete3 cloves garlic, peeled
3 fresh green chile peppers
6 green beans, cut into 1 inch pieces
1 large avocado from Mexico, peeled and cut into thin strips
1 tomato, halved and seeded
2 tablespoons fish sauce
2 tablespoons lime juice
1 teaspoon brown sugar
2 tablespoons finely chopped unsalted, dry-roasted peanuts
I coarsely chop the garlic, chile peppers, and green beans. Then, mix in the avocado, tomato, fish sauce, lime juice, and sugar in a blender/food processor. rocess the mixture until soft and slightly chunky and dump into a bowl. Then, mix in peanut and sometimes I even throw in chunks of mango for sweetness. This goes GREAT over grilled fish in tacos!
Thank you for the giveaway :)

Your recipe sounds interesting. Not something for me though
ReplyDeleteWe make lentil tacos:
ReplyDelete1 cup lentils cooked in a mix of water and 8oz tomato sauce until tender (usually I cover the lentils and boil, then add the tomato sauce a little over halfway through -- be certain to check and stir often to prevent sticking and burning)
When the lentils are nearly cooked, mix in one packet of taco seasoning and cook until lentils are your desired texture (we like mushy)
Serve lentil mixture on corn tortillas with a chunky salsa, lettuce, shredded sharp cheddar and, of course, chunks of avocados from Mexico
This is a delicious and economical recipe and my toddler loves it!

YUM!! I want to make it taco night tonight!
ReplyDeleteWe do burrito night sometimes, and most nights to make it easy, we go vegetarian.
It's a "recipe" we made up in the early days of marriage:
Black beans
Corn
Avacados From Mexico
Salsa
Sour Cream
Cheese
Super easy--the beans and corn were from cans and everything else we usually had on hand.
This would go great in a taco shell, too, I'm sure!
What a fun contest! My mom & I had a Taco Night this evening, actually. We cooked Morningstar Farms meatless crumbles with finely chopped onions & some Ortega taco seasoning, then put out little bowls of toppings to choose from: spicy salsa, saffron rice, black beans, shredded jack cheese &... yes, guac!
ReplyDeleteMy guac recipe comes from a blogger friend, & it's kind of AMAZING even though it sounds, at first read, like it'll be disgusting:
You need:
- ripe avocados from Mexico (how many you use depends on how much guac you want!)
- any brand of Italian dressing - yes, really!
- any kind of Cajun seasoning (I use Tony’s)
- sour cream (I use lowfat)
After you mash up the avocados, add a splash of italian dressing & as much Cajun seasoning as you like, all to taste. Add a dollop of sour cream to make it creamier... & there you have it! Cajun Italian Guac. Amazing, right?

We like Chicken Tacos:
ReplyDeleteShredded cooked chicken breast
Chopped Avacados from Mexico
Sliced green onions
Chopped tomatoes
Black Beans
Sour Cream or Lowfat Yogurt
Shredded cheddar cheese
Assemble as desired in heated taco shells and enjoy!
Our avocado taco night would include all of your normal taco "fixins" laid out on the table, for everyone to make their own tacos: beef, beans, cheese, lettuce, sour cream, tomatos, etc. But we would then top it off with this yummy dressing:
ReplyDelete1 whole Large Avocado
1 cup Cilantro; Loosely Packed
1 whole Lime (juice Only)
1 whole Lemon, Juice Only
1 whole Clove Garlic Minced
1 Tablespoon Red Wine Vinegar
1/4 cups Extra Virgin Olive Oil
1/4 cups White Balsamic Vinegar
1. Scoop out the flesh of the avocado and place in a blender or food processor.
2. Add cilantro, citrus juices, garlic, red wine vinegar and olive oil.
3. Blend on low, adding up to 1 more tablespoon of the red wine vinegar and white balsamic vinegar to taste as you go, until emulsified. You may want to add more olive oil and vinegar/citrus juices to thin out.

We make guacamole, we smoosh up the avocado, add a little salsa and lime juice to taste. We have friends who keep the pit in the guac, and that keeps it from browning. I also fed it to my son as a first food. My doctor recommended it and he loved it!

I make chicken soft tacos using Avocado's from Mexico. I marinate the chicken breast in lime juice and chipolte bottled marinade. Then while I grill the chicken, the kids set up the 'taco bar' We have every topping you can think of- tomatoes, salsa, 3 kinds of cheeses, lettuce, sour cream, black beans, diced red bell peppers, and diced avocado. When the chicken comes off the grill, I slice it into thin strips and everyone assembles their soft taco. I love the creamy avocado with the crispy lettuce and spicy chicken.

ReplyDeleteWe most often make tacos on a fry bread.
ReplyDeleteInstead of a shell, it's a thicker, flat fried dough base, with all the toppings piled high and happy.
For the dough:
3 cups flour
1 Tbsp baking powder
1 Tsp. salt
1/8 Tsp pepper
1/8 Tsp cumin
1 1/2 cups warm water
Mix the flour, salt, and baking powder together in a bowl. Sift or stir this together.
Add the "warm" water to this mixture and stir until all the dry ingredients are mixed well.
Put oil on your hands; remove dough from bowl and knead until the dough is smooth.
When the dough is smooth & soft, rub oil over the top of your dough.
Place back into the bowl, cover with a dry cloth & let rest for "20" minutes.
Begin heating your oil
Press dough into small circles.
Drop circles into the hot grease until golden brown, then turn over until golden brown on the other side as well.
For the toppings:
Prepare your favorite method of taco meat (gr. beef, chicken, or turkey). Spread a layer on the fry bread.
Add lettuce, tomato, onion, shredded cheese, and 4 big slices of avocados from Mexico.
Thanks for the chance to win! Now I'm hungry.

Well, recently we have been making a guacamole salsa. Using fresh avocados that aren't fully ripe so still firm, dice them up and toss them in lime juice. Dice red onions, roma tomatoes, jalapenos, and minced celery (for texture). Toss in minced garlic, finely ground white pepper, and some sea salt. Great for chips and topping your tacos. Now I'm all hungry!
