* I am running this sweepstakes at the request of Avocados from Mexico, for which I will receive $100 gift card in appreciation.

  1. I make a Green Avocado salad as a topping for fish tacos:

    3 cloves garlic, peeled
    3 fresh green chile peppers
6 green beans, cut into 1 inch pieces
1 large avocado from Mexico, peeled and cut into thin strips
    1 tomato, halved and seeded
    2 tablespoons fish sauce
    2 tablespoons lime juice
    1 teaspoon brown sugar
2 tablespoons finely chopped unsalted, dry-roasted peanuts

I coarsely chop the garlic, chile peppers, and green beans. Then, mix in the avocado, tomato, fish sauce, lime juice, and sugar in a blender/food processor. rocess the mixture until soft and slightly chunky and dump into a bowl. Then, mix in peanut and sometimes I even throw in chunks of mango for sweetness. This goes GREAT over grilled fish in tacos!

Thank you for the giveaway :)

  2. Your recipe sounds interesting. Not something for me though

  3. We make lentil tacos:

1 cup lentils cooked in a mix of water and 8oz tomato sauce until tender (usually I cover the lentils and boil, then add the tomato sauce a little over halfway through -- be certain to check and stir often to prevent sticking and burning)

When the lentils are nearly cooked, mix in one packet of taco seasoning and cook until lentils are your desired texture (we like mushy)

Serve lentil mixture on corn tortillas with a chunky salsa, lettuce, shredded sharp cheddar and, of course, chunks of avocados from Mexico

This is a delicious and economical recipe and my toddler loves it!

  4. I make a simple guacamole

    mash 2-3 avocados
when they are desired consistency add a smidge of salsa (don't like that measurement? about 2 tablespoons), some crazy salt and juice from a quarter of a lime.

  6. We make it a creative taco nigh. We have browned beef and pinto beans with tons of toppings to choose from, black olives, corn, cheese, lettuce, tomato, sour cream, salsa, guacamole and everyone makes their own creation

  7. I make Beer Battered Fried Avocado Wedges

    1 cup lager beer
    1 cup all-purpose flour

    Serve wegdes with salsa.

  8. YUM!! I want to make it taco night tonight!
We do burrito night sometimes, and most nights to make it easy, we go vegetarian.
It's a "recipe" we made up in the early days of marriage:
    Black beans
    Avacados From Mexico
    Sour Cream

Super easy--the beans and corn were from cans and everything else we usually had on hand.
This would go great in a taco shell, too, I'm sure!

  9. What a fun contest! My mom & I had a Taco Night this evening, actually. We cooked Morningstar Farms meatless crumbles with finely chopped onions & some Ortega taco seasoning, then put out little bowls of toppings to choose from: spicy salsa, saffron rice, black beans, shredded jack cheese &... yes, guac!

My guac recipe comes from a blogger friend, & it's kind of AMAZING even though it sounds, at first read, like it'll be disgusting:
    You need:

    - ripe avocados from Mexico (how many you use depends on how much guac you want!)
    - any brand of Italian dressing - yes, really!
    - any kind of Cajun seasoning (I use Tony’s)
    - sour cream (I use lowfat)

After you mash up the avocados, add a splash of italian dressing & as much Cajun seasoning as you like, all to taste. Add a dollop of sour cream to make it creamier... & there you have it! Cajun Italian Guac. Amazing, right?

(And if I should win, you can find me at suburbansweetheart at gmail dot com)

  10. Fish Tacos

    Two avocados from Mexico
    2 tablespoons lime juice
1 pound firm white fish cut into 2-inch chunks
    1/4 cup flour
    1/2 teaspoon salt
    1/4 cup oil for frying
    2 cups shredded red cabbage
    1/2 teaspoon salt and pepper
    4 flour tortillas

1.Cut avocados in half, remove pit, and peel. Cut in chunks and sprinkle with lime juice. Toss shredded cabbage with salt and pepper.
2.Mix flour, salt and pepper in a deep plate with a fork. Dredge fish chunks in mixture. In large skillet over medium high heat, heat oil. Add fish chunks, cook until browned on all sides.
3.Divide cabbage mixture between tortillas. Top with fish chunks, avocados and garnish with cilantro and additional lime or lemon slices.

  11. We like Chicken Tacos:

    Shredded cooked chicken breast
    Chopped Avacados from Mexico
    Sliced green onions
    Chopped tomatoes
    Black Beans
    Sour Cream or Lowfat Yogurt
    Shredded cheddar cheese

Assemble as desired in heated taco shells and enjoy!

  12. Our avocado taco night would include all of your normal taco "fixins" laid out on the table, for everyone to make their own tacos: beef, beans, cheese, lettuce, sour cream, tomatos, etc. But we would then top it off with this yummy dressing:

    1 whole Large Avocado
    1 cup Cilantro; Loosely Packed
    1 whole Lime (juice Only)
    1 whole Lemon, Juice Only
    1 whole Clove Garlic Minced
    1 Tablespoon Red Wine Vinegar
1/4 cups Extra Virgin Olive Oil
    1/4 cups White Balsamic Vinegar

    1. Scoop out the flesh of the avocado and place in a blender or food processor.
    2. Add cilantro, citrus juices, garlic, red wine vinegar and olive oil.
    3. Blend on low, adding up to 1 more tablespoon of the red wine vinegar and white balsamic vinegar to taste as you go, until emulsified. You may want to add more olive oil and vinegar/citrus juices to thin out.

  13. We make guacamole, we smoosh up the avocado, add a little salsa and lime juice to taste. We have friends who keep the pit in the guac, and that keeps it from browning. I also fed it to my son as a first food. My doctor recommended it and he loved it!

  14. Avocado Contest Recipe:

    * 3 ripe avocados
    * Juice of 1 lime
    * small red or yellow onion chopped
    * 2 garlic cloves minced
    * 15 cherry tomatoes diced (they give extra sweetness)
    * 1/4 tsp cumin
    * 1/4 tsp hot sauce

Mash avocados and combine all other ingredients. Delicious!

  15. My favorite taco recipe includes Mexican avocados.
    Season favorite meat with:
    chili powder
    and chlis to taste.

Then load taco shells with these ingredients and add lettuce, tomatoes and avocados. These avocados need to be mashed. Add:
    diced yellow onions
    lime juice.

    Wonderful! Thanks for the chance.

  59. One of my favorite comfort foods would have to be avocado soup, which is a breeze to make but so delicious and a perfect appetizer or side for taco night:
    1 small onion, finely chopped
    Olive oil for saute
    1 med. avocado from Mexico
    2 teaspoons soy sauce
    2 1/2 cup of water
    sea salt

Saute the onion until its transparent. Peel avocado and remove the pit. Combine the onion, avocado, soy sauce and water in a food processor or blender and beat well. When the mixture is smooth put into a saucepan and let it come to a boil. Simmer for 2 or 3 minutes.

  62. I like this simple recipe for guacamole. Using two avocados, I add chopped tomato, onion, cilantro, lime juice, and a dash of sea salt. If you like it spicy you can add a sliver of habanero (very hot) or jalapeño (mildly hot).

  63. We love chicken or refried bean tacos and our avacado topping is dead simple.
    2 mashed avocado
    3 tbsp grated red onion
    1/2 clove finely minced garlic
    3 tbsp medium salsa
    salt to taste

Add to taco shell with filling, top with shredded cheese and sour cream. PERFECT!

  64. I like to make an easy guacamole using just a few ingredients.

    3 whole avocados
1 can ro-tel tomatoes with cilantro
    1 clove of garlic
    1/2 chopped red onion

I mash it together with a fork and serve on taco salads. Yummy!

  65. I like to make fish tacos a little bit differently.

    4 tilapia fillets
    1 chopped onion
    1 T. minced garlic
    2 T. Chili Powder
    1 T. Cumin
    Juice of 1 lime
    handful of chopped cilantro
    Salt and Pepper to taste

    For toppings:

    Chopped Avocados
    Salsa or chopped tomatoes
    Sour Cream
    Shredded lettuce
    Shredded cheese
    Lime Wedges

These are really simple to make. I saute the onions and garlic in a little olive oil. Then I add the fish and cook until done. When the fish is cooked through, I flake it apart and add the spices and lime juice.

I usually put the filling into warmed whole wheat tortillas, but whatever you like is fine. Then let everyone top them as they please.

  70. We most often make tacos on a fry bread.
Instead of a shell, it's a thicker, flat fried dough base, with all the toppings piled high and happy.

    For the dough:
    3 cups flour
    1 Tbsp baking powder
    1 Tsp. salt
    1/8 Tsp pepper
    1/8 Tsp cumin
    1 1/2 cups warm water

Mix the flour, salt, and baking powder together in a bowl. Sift or stir this together.
Add the "warm" water to this mixture and stir until all the dry ingredients are mixed well.
Put oil on your hands; remove dough from bowl and knead until the dough is smooth.
When the dough is smooth & soft, rub oil over the top of your dough.
Place back into the bowl, cover with a dry cloth & let rest for "20" minutes.
    Begin heating your oil
    Press dough into small circles.
Drop circles into the hot grease until golden brown, then turn over until golden brown on the other side as well.

    For the toppings:

Prepare your favorite method of taco meat (gr. beef, chicken, or turkey). Spread a layer on the fry bread.
Add lettuce, tomato, onion, shredded cheese, and 4 big slices of avocados from Mexico.

Thanks for the chance to win! Now I'm hungry.

  72. Well, recently we have been making a guacamole salsa. Using fresh avocados that aren't fully ripe so still firm, dice them up and toss them in lime juice. Dice red onions, roma tomatoes, jalapenos, and minced celery (for texture). Toss in minced garlic, finely ground white pepper, and some sea salt. Great for chips and topping your tacos. Now I'm all hungry!
